Jim Crowe and his wife Noelle have been landlords of The Frog at Skirmett for the past 11 years. Jim is the head chef.
What kind of pub would you call The Frog?
It is a blend of what is called Modern English, and classic French. We source a lot of the produce locally, and we serve a lot of fresh fish.
What would you order for a three course meal?
Scallops, followed by Dover sole and home-made ice cream, good plain vanilla. It's terrific.
What kind of pub would you say it is?
A country pub with a restaurant serving good fresh ingredients. One thing we have always insisted upon is retaining the pub aspect, and anyone is welcome for a drink. We get a great range of people here, young and old. We want people to feel as comfortable as they can coming for a drink or to eat.
What is the history of the pub?
There has been a pub here for about 350 years, and it started coming on the map for food 20 years ago, but had a succession of different owners. When we came here, there wasn't any trade and we had to build it up from scratch.
We had the Cross Keys in Great Missenden before this, so we were fortunate that we had a good client base locally. We focus on good service, attention to detail, and good food. It's done okay as we are still here 11 years later, and have also bought the pub in that time.
