A Chinese takeaway has made 'significant improvements' after receiving a zero food hygiene rating back in December.
China Brasserie in Pine Street, Fairford Leys, Buckinghamshire, was re-inspected in February and received the highest possible score.
It came after inspectors from Buckinghamshire Council carried out a full inspection in December and gave the restaurant the lowest possible rating after finding a number of issues with the way the business was run and how the kitchen operated.
The Bucks Free Press reported on the rating at the time and has now obtained a full copy of the inspection report after submitting a Freedom of Information (FOI).
Among the recommendations made by the inspectors in the report, were the need to improve food storage, prevent contamination of food and put adequate pest control in place.
The inspectors said that only the takeaway owner had food hygiene training with the other two members of staff not having adequate food safety knowledge.
The report said: "One of them was unaware of the requirement to use a disinfectant to clean food contact surfaces."
Food was found stacked on top of each other in unlidded containers.
Inspectors said: "This included both raw meat (pictured) in the walk-in fridge and also cooked meat in the upright fridge. Any contamination from the bottom of the dish could pass onto the food it’s stacked on." The business was told to use appropriate lids or coverings.
On food preparation, it states "Separate area for raw meat prep, including sink. Green board for salad. Aware of 75degC but in reality, they rarely use it and rely on visual checks."
In terms of pest control, the report noted how "there was a gap at the bottom of the door" where "a mouse could easily pass through and into the kitchen".
There was also "no soap or hand dry at hand wash basin", according to the report.
Inspectors said at the time: "These are basic essentials and should always be checked at the start of any shift as part of your opening checks.
"There is no excuse for not having these basic hygiene essentials available. Chef seen rinsing hands at the wash-up sink - you should use the designated hand wash sink."
The takeaway has managed to bounce back since the last inspection in December having received a new rating in February.
It has now jumped from a zero to a five rating which means food hygiene standards are 'very good.'
The latest inspection on February 7 reports: "The Cleanliness and condition of facilities and building (including having appropriate layout, ventilation, hand washing facilities and pest control) to enable good food hygiene are good.
"Hygienic handling of food including preparation, cooking, re-heating, cooling and storage is very good."
